Back-of-the-Box Cornbread


Am I a recipe snob? Do I avoid using the recipe on the package merely because I'm elitist and believe that anything out of a cookbook must be better? When Geoff makes cornbread, he just uses the recipe on the package of cornmeal, rather than digging out the Fanny Farmer Cookbook.

After eating his cornbread, I'm not convinced that it makes a difference. I must now admit that from time to time, I have used the tollhouse cookie recipe on the package of Nestle chocolate morsels. Yeah, it's still a good cookie.

There is absolutely nothing wrong with the cornbread recipe on the back of a Quaker cornmeal container. I even refrain from adding canned corn (my sister's method) since I know you despise it. I notice you had no issue demolishing Rice Krispies Treats which also came off the back of the marshmellow bag.

I can't live without the Quaker cornmeal recipe. But I always vary and substitute, most often with butter instead of oil and buttermilk instead of milk. The recipes on these packages tend to be really good. They are tested a zillion times and are written so that even if you're a terrible cook it's hard to screw them up. Apparently they test them using coffee cups and kitchen spoons for measuring because that's how many people really bake. (I don't know about the canned corn though...)
